Anzac Cookies
Anzac Cookie recipes abound. This one has been passed down with it's starting point, we think, 1933 Country Women’s Association of NSW recipe for ANZAC biscuits that is available from the Australian War Memorial Website.

  • 1 cup rolled oats
  • 1 cup soft brown sugar
  • 1 cup desiccated coconut
  • 1 tbs of golden syrup
  • ¾ cup of flour
  • 2 tbs of butter or coconut oil
  • 1 tsp of bi-carb soda (dissolved in 2 tbs of boiling water)
  • ½ cup of dried cranberries.
  1. Preheat oven really low 150C.
  2. On low heat, place in a saucepan the butter (or coconut oil) and melt it slowly. In a bowl dissolve bicarb soda with a little hot water then add the golden syrup and melted butter.
  3. Into a separate bowl sieve flour then add dry ingredients. Stir in the saucepan of liquids above.
  4. With a tablespoon make small balls and place on baking paper and bake in pre-warmed oven. Bake 15-20 minutes.
  5. Let them harden on the baking tray. When cool store them in an airtight container.
